Overview

This coffee is a first for us at Shiloh Coffee Roasters as it’s our first natural process Colombian decaf.

This coffee has been sourced from Siruma Coffee, a specialty coffee exporter which focuses on generating value for clients and providers while achieving social impact in coffee-growing families.


Coffee is picked very ripe so the sugar content is higher. It is then floated and floaters are removed leaving only the good cherries for processing. The cherries are moved to a mechanical silo for approximately 48 hours at 28 degrees celsius to dehydrate the coffee until 20 per cent moisture is reached. It then undergoes a 24-hour fermentation in sealed bags at ambient temperature. The cherries are moved for drying in the same mechanical silo at 37 degrees celsius until 15 per cent moisture is reached. It is then dried again in a parabolic drying system until 10 per cent moisture is reached.
