This limited-edition two-bag pack brings together two coffees with a deliciously creamy profile, one from Costa Rica and one from Zambia. Both these coffees have been produced using a yeast fermentation process, which brings out the creaminess in them.

We have a limited amount of the Zambian coffee left and once it's gone, it's gone.


Coffee 1: Costa Rica - Finca Matilde

Tastes Like:  Raisin, dried date, grape, tamarind and blueberry acidity.
Location: Finca Matilde, Costa Rica
Varietal
: Arabica - Victoria 04
Altitude: 1,525 masl
Process: 48hrs yeast fermentation, honey process

Context

This coffee comes from our Costa Rican supplier Dylan Aguilera's farm, Finca Matilde.
The Aguilera family has grown coffee at this farm in the country's west valley for more than 60 years. 


This particular coffee is a newly-developed hybrid unique to Costa Rica, known as Victoria 04. For this lot, Dylan has used an experimental yeast fermentation process that uses select yeast strains to break down the cell structure of the bean during fermentation, giving more control over the fermentation process and enhance the coffee's fruity, syrupy profile.

 

Coffee 2: Zambia - Mount Sunzu

: Cacao nibs, walnuts and citrus notes

Sweet chocolate body. 
Location: Mount Sunzu Coffee Farm, Zambia
Varietal
: Starmaya E
Altitude: 1,600 masl
Process: Yeast fermentation

Context
 
This coffee was processed on-site at Mount Sunzu’s own wet mill. After selective picking, ripe cherries were pulped, before being fermented for 42 hours in water in specially-designed water tanks. After the fermentation process the coffee was spread out on raised 

drying beds which got covered during the night, taking up to 25 days in total to dry.
