Context

This is our latest microlot from our friends at Gold Mountain Coffee Growers in Nicaragua. Husband-and-wife team Roger and Isabel have grown this microlot on their farm, Las Mercedes. A degree in agronomy helps Roger get the best out of the farm and he loves sharing his technical knowledge and tips.

The Caturra, Bourbon, Pache and Javanica beans featured in this microlot have been produced using the honey process. In this particular case they have left as much of the fleshy fruit around the bean, known as mucilege, as possible on the beans to help enhance their flavours. The process enables the fruit to influence the flavour of the beans. 

Las Mercedes has a clean water source that serves the community below with drinking water. It also has a system of PVC tubing with tiny perforations underneath the grooves of the trees to bring water run-off from washing coffee gets filtered by the earth rather than polluting nearby streams.

Gold Mountain Coffee Growers is a social enterprise that runs its own farm and also works with other coffee producers in Nicaragua to connect them to roasters across the world, enabling those roasters to secure high-quality, specialty coffee for their customers.
