Drumroll please, it's time for the big reveal
The time has come to reveal the first single-origin coffee that will appear in this year's Christmas Box and we're excited to share this beautiful natural coffee from India.
The Mooleh Manay coffee is grown on an estate of the same name, which is managed by South India Coffee Company founders and husband-and-wife team Akshay and Komal Dashrath.
This Arabica coffee is grown at 1,000 metres above sea level on a 75-acre farm in Nakoor Village in the Coorg area of Karnataka.
Trained staff pick perfectly ripe coffee cherries and transport them from their farms daily. The cherries are then floated to remove any with defects.
Next the coffee is fermented with yeast in an environment without oxygen for 48 hours before being dried on raised beds in polytunnels.
The coffee is raked regularly to ensure even drying and once it reaches a moisture level of 10-12% it is moved to the warehouse to rest for six to eight weeks before being hulled.
Komal and Akshay are fifth generation coffee growers on the Mooleh Manay estate, which is located near the beautiful backwaters of the Harangi Reservious in Coorg.
They takes a data-driven approach to farming and coffee processing, believing that data is essential for optimising agricultural practices and ensuring the highest quality coffee production.
As well as using meticulous processing methods to bring out the best in the coffees they grow, the couple work hard to support and develop the southern Indian coffee economy as a whole.
South India Coffee Company sources coffee from more than 20 producers across the country to distribute globally.
Its research and development wing is also conducting research to help climate-proof coffee and coffee agricultural processes.
Mooleh Manay is the Asian coffee and the natural coffee to appear in this year's box.
It will feature alongside two more single-origin coffees as well as our Christmas Mills Blend, which went down a storm at Caffe Culture earlier this month, and our Christmas Foundry Blend.
Of the remaining single-origin coffees, one will be from the Americas and one from Africa. One will be a washed coffee and the other a honey-process coffee.
We'll reveal the second single-origin coffee in two weeks. Before then, though, you can enjoy a 20% discount on your Christmas Box and Christmas Decaf Box pre-orders. But hurry, about a fifth of our available Christmas Boxes are already spoken for.
